- It's 4 of small red onions,or 6 in a Pack.
- You need 4 of medium carrots,chopped.
- It's 4 of Parsnips,chopped.
- Prepare 4 of Maris Piper Potatoes,chopped.
- You need 4 of Leeks,chopped.
- It's 2 of red Chillies (optional).
- It's 1.400 ml of to 2.000ml Vegetable Stock.
- You need 4 tbsp. of Olive Oil.
- You need of About 1 tbsp. Sea Salt.
- It's of About 1 tbsp. Black Peppercorns.
Vegetable Soup step by step
- Heat the olive oil in a large saucepan..
- Add the vegetables (onion,carrots,parsnip,leek,potato) and cook for about 5 minutes..
- Add the Vegetable Stock water and bring to the boil.Cover and cook for a further 20 minutes..
- Allow to cool to room temperature..
- Pour contents of saucepan into your blender and blend for about 30 seconds until completely smooth.Add more stock or hot water if required..
- Pour contents back in to the saucepan and add the chilli.Alter the consistency with a little stock or hot water if desired.Season with salt and pepper if required..
- Simmer for 10 minutes and serve..
